Mostarda is a culinary specialty of northern Italy, consisting of preserved fruits such as figs, cherries, pears, lemons and peaches candied in a sugary syrup strongly flavoured with mustard oil. This mostarda, made with delicious plums, has a sweet-sharp flavour that makes it ideal for serving as a relish with cold and hot meats, such as zampone (stuffed pig's trotter), boiled beef tongue and bollito misto (a mixture of boiled chicken, ham, sausage and beef). An idea compliment to shart, hard cheeses from the same region.
