"Also know as the bird pepper, pequin peppers are very hot -- registering 30,000-60,000 on the scoville scale. The flavour is described as citrusy, smoky, and nutty. Often a small quantity is mixed with lemon and salt and sprinkled on fruit like mangoes, jicama and pineapple (the enzymes in pineapple help diffuse some of the peppers heat).
