Valdeón cheese is a Spanish blue cheese, made in Posada de Valdeón, in the Castile-Leon region of the northwestern Spain. It is a rich, creamy, intensely-flavored cow and goat's milk blue cheese, saltier than Stilton yet not as yellowed oras biting as its cousin Cabrales. It is wrapped in sycamore maple or chestnut leaves before being sent to market, which contribute to their distinctive appearance and complex flavor.
