"Annatto seed, or roucou, are the reddish, round seeds of the achiote tree -- originating from South America. The seeds used both whole and ground. Ground, it can be used as a food colouring, as a component in spice pastes or spice mixes -- as it has a peppery, nutmeg like flavour. As a paste, it is added to water or vinegar, and sometimes other herbs and spices such as cinnamon, bay leaf, cilantro, salt, cloves, and oregano. It can be used in moles, tamales, stews, rice dishes, and with meats and seafood.
