Mishima Ranch Wagyu beef sets itself apart from other American Wagyu Brands with high production and quality standards that are un-matched in the industry. Quality standards dominate the attitude throughout the whole system and those standards shine through in the end product. How we grade our beef: Like many American Wagyu producers we use the Beef Marbling Score to assign a grade to the beef. We use the score between the rib and chuck to assign the grade. The reason we do this is simply because the break between the rib and the chuck is a more consistent and proven indicator or the carcass marbling as a whole. Using the rib/loin break may result in inconsistencies and not indicative of the true grade of the carcass. Our average marbling scores: Even though we use a more strict measurement of BMS score, the rib/chuck score we still have the highest average grade in the US. For the Gourmet offers two grades for different applications. BMS 4-5 is called 4 Star Grade and equal to high USDA Prime. BMS Score 6-7 is called 5 Star Grade and is equal to very, very high USDA Prime.
