Bowfin, latin name: Amia calva, are known in the caviar world for their shinny small flavorful eggs. Bowfin caviar has a rich, earthy flavor and chalky texture and is extreamly close to the roe of the Hackleback sturgeon in both flavor andsize. The primary differences are that the eggs are oblong, not round and when this roe is used for any type of cooking, the caviar will mysteriously turn red due to pigments that are only visible when heated.
