In Hawaii it is caught on tuna longlines set about 1,000 ft below the surface. The opahthat are typically landed in the Hawaii fishery weigh about 100 lbs with a diameter of about 3 ft. They have been caught at up to 800 lbs in size. The meat color from this delicious fish ranges from red to pale orange and is high in good oils and has a rich buttery flavor. It can be broiled, baked or grilled.
